Dear CSA Members,

This week's CSA shares are for Weekly members and Monthly Protein Share members.

Looking forward to a Cooler Garden!

The garden is bustling with activity this time of year and the pressure is high. It's hot. Summer's bounty of tomatoes, corn, squash, beans, etc. are heavy and hard to harvest. At the same time, seeds must be started and transplants planted for fall. This is the time of year when our gardeners tend to burn out in the heat. Luckily, we were able to add more people. It's true that many hands make light(er) work.

Many thanks to our current staff who kept the garden running until we found additional help. Many thanks to the new staff who jumped right in with talent and enthusiasm. 

Fall is our favorite time of year at the farm. Cooler weather brings vegetables like sweet potatoes, butternut squash, turnips, broccoli, cabbage roots and those tender greens! There is a reason Thanksgiving is in November. The Fall yields "THE HARVEST".

Fall/Winter Season starts September 3rd and runs until December 17th. We will send a special link in a separate email this week so you can easily reenroll. In the meantime, this is a good time to pay any remaining balances on Spring/Summer shares. 

CSA Shares - Weekly Members + Monthly Protein Shares

Eggplant - 'Purple Beauty' 'Rosa Bianca' and an unkown variety we're calling 'Golden Surprise':  'Purple Beauty' is a regular looking eggplant, 'Rosa Bianca' is a white and light purple striped one, and 'Golden Surprise' is a variety that our heritage seed supplier must have accidentally slipped into our seed packets. Golden Surprise is smaller and have turned a brilliant yellow color. They are delicious! Try Roasted Eggplant with Lemon and top with parmesan cheese if you'd like. Okra - 'Cowhorn' 'Evertender' 'Burgundy':  a few different varieties are in the bags. All delicious! Here is the classic Southern Fried Okra recipe and a few tips for how to serve it. For a healthier version, try Sautéed Okra with Tomatoes and Corn

Malabar Spinach - Full of Vitamin C, A and K, Malabar Spinach is summer's green. Ignore the bug scars, they absolutely will not hurt you. I love it with squash, zucchini and especially a potato or two in a stir-fry. Add an onion if you like. First, clean and slice the potato into 1/3" slices. Stir sliced potatoes, zucchini and squash in a pan with hot olive oil until "roasted" (slightly browned). Add salt and pepper, 1/4 cup of water and malabar spinach. stir and cook until the spinach and potatoes are tender. Serve hot. 

Potatoes - 'Purple Sun' 'Purple Viking' 'Kennebec' may be mixed together in your bag this week. After cleaning, cut into chunks with your Patty Pan Squash and anything else you like - tomatoes, carrots, bell peppers, etc. Stir in olive oil, salt and pepper to taste, spread on a cookie sheet lined with parchment paper and cook in a preheated oven at 400 degrees until tender. Add more salt and pepper and serve hot. For a more elegant dish that is sure to please everyone, try Simple Au Gratin Potatoes

Tomatoes - 'Cherokee Purple' 'Marglobe' 'Eva Purple Ball':  same varieties as before and we still enjoy them sliced as a side dish to any meal. My favorite is with peeled and thinly sliced cucumbers drizzled with olive oil and balsamic or apple cider vinegar and sprinkled with dried dill. 

Patty Pan Squash - 'Bennings Green Tint':  Same variety as last week.  Cook just like any other summer squash, or include them in a casserole such as Yellow Squash Gratin

Edamame - This is the last week we'll have it for a while.  Steam it or saute it! These instructions will help you Steam Edamame

Sweet Peppers - many varieties, some green, some purple, some red and are delicious stuffed, stir-fried, roasted in the oven. Try this healthy recipe for Stuffed Bell Peppers that uses mushrooms, corn and other goodness. These can be frozen for later enjoyment. 

Hot Peppers - 'Anaheim' 'Hungarian Wax' will season ANY of the dishes above, or enjoy them with your eggs.

Protein Share Members will enjoy Beef Ribs and Hamburger. For the best beef ribs, try Slow Cooker Barbecued Beef Ribs. It's a no brainer. Or, if you prefer the taste of grilled ribs, try Grilled Beef Ribs with Smokey Sweet Sauce. YUMMMMY! Your hamburger is perfect for stuffed bell peppers or any dish!
